My first thought is to try a course 'reset' with new course open / course close dates (and not select anything else during the reset process except for a new course start/end date) -- this should push 'everything' by a week, but that would also include the earlier dates prior to xmas week ( and you'd want to test this in another course first).
Otherwise if you go the manual route, two tools that are helpful for changing activities dates in mass are are the Dates Report (3rd party plugin) to push 'due/open/close dates' if you use those, or the tucked away Bulk Edit Activity Completion (under the Course Completion menu) to push Expected To Be Completed On dates...
The Weekly Topics Course Format might be useful as well possibly, I haven't used it before though.
