I have narrowed the problem down more Ken. Last night, I did a full automated course backup and I found 34 courses that were backed up correctly. I have 9 concurrent tasks, when the tasks are all filled with 'crashed' backup tasks, Moodle won't handle any tasks anymore.
I free them up in mdl_task_adhoc and then Moodle can continue backing up courses.
Here's the interesting part: of the 34 courses that were backed up properly, none is bigger then 547 MB. So I bet that every course that results in a course backup file bigger then (approx) 550 mb will crash.

When running the backup via CLI using Moosh, this limit is not applied. Every course can be backed up without problems.
So I hope you have some info what this limit in the Moodle backup is. Could it be memory? Could it be something like max_post_size or whatever? Some PHP setting?
I looked at my PHP settings via php-info in Moodle. I can see a master setting and a local setting. Could somehow the master setting be applied? These are my values:
