Thank you for your detailed message and helpful suggestions.
The only way we were able to resolve this is to turn off asynchronous backups (we can still do that as we're not on the latest version) and run the backup and restore the "good-old-way" and that was good enough for the teachers.
The issue now is we want to upgrade but we're afraid we won't be able to backup / restore going forward. Our test instance is on 4.5 but has the same issue...
