Backup and restore all courses and categories at once

Hi evryone

I updated moodle from version 3.6 to version 3.9, following the documentation, and i lost all my courses content (in a dev environment)

Is there a way to backup and restore all my courses at once?  ... just in case

I also need to update the production environment but i don't want to risk and a backup of all courses would be helpful
