What's the goal here? Backup a course and get it to a new server?
Is the course still being used? If so, one can make a no user backup of the course. That should reduce the size of the backup ... how much smaller depends upon number of users etc.
OR ... if course is no loginer being used, make one full backup for archive/records retention purposes, then reset the course. In choosing options for reset, remove all students and their work .... turn down each option and decide what to clean out of the course. Reset removes students/assignments/quizzes/grades ... etc. .... end up with a new course ready to take on new entrollments/students.
Then, make another backup of the reset course to xfer to new server.
