Here's an update after setting up an automated backup process. Of the some 800+ classes that it could have backed up, it produced 6 files. The report was:
Summary

Courses: 879
OK: 0
Skipped: 0
Error: 0
Unfinished: 0
Course backup ad hoc task pending: 6
Warning: 0
Automated backup pending: 873
Backup completed successfully
It seems like Moodle doesn't courses are in need of backup. I'm struggling to think what I changed... I've attached a screen shot of the automated backups settings page for reference.
