If you restore the courses with users, on first login, I believe they should be prompted to update their password but should be able to log in correctly.
As for the video, you will need to create something between your video hosting site and moodle site to protect the video. Or you could host the video in an external repository that is only available to the moodle site. The extent of protection will obviously depend on what you use to host your video...but, as Ken already stated, there is no way to totally protect it...
