#1 if you transferred the site then everything goes ... users/password/courses/roles, etc.
No one can give you 100% certainty however - but 99.99% of the time, if xfer is done correctly, no issues. Example ... where you have the site now is on the same network as the ldap server you are using for user authentication. The server you are moving to is not on the same network ... you would have to adjust.
#2 ... don't know that anyone can totally protect videos once any user sees them. They could screen capture and share the screen capture ... may not be as good a quality as original but sharable.
