DB dump 36 GB? Well, my point is starting to shake. Yet more reason for the IT to provide the backup server - makes only sense in their IT infrastructure (LAN).
About the fundamental question: the value vs. the cost of taking (daily) course backups. Worth looking at it from an administrative perspective. For a big university like yours I would say, regular site backups, but course backups taken only during the semester break (and archived).
