All the Server Checks page does is snap back to 2.8.1 It cannot be set to any other version. After each clicking of Server Component, the page is set to 2.8.1 again.
According to what I've read, a Moodle has to upgraded to 3.1 before it can be upgraded (again !) to 3.7. It is not possible to jump from 2.8.1 to 3.7
