Ken helped me find success.

1. Only the last backup made appears in the bacckups window.
2. If you make another backup, the first one is removed.

So

1. Select a course from courses
2. Click Backup
3. Set what is to be backed up
4. Make the backup
5. Click Continue
6. IMMEDIATELY download the backup
7. When the download advice appears at the bottom of the Moodle window, right click it and select show in Finder
8. Copy this file to a Backups folder
9. Go back to step 1 and to make more backups
10. Each time you do work on a course, end the session with a backup of that course, copying it to an off Moodle location
